Rachael Ray’s weight loss transformation has been anything but extreme and, as she has made clear in her own words, it all comes down to simple, nourishing food.

The TV chef, who has shed around 40 pounds in recent years, has long credited her approach to eating well rather than following restrictive trends, with a strong focus on the Mediterranean diet.

Rachael has spoken openly about her love for the lifestyle, previously explaining on Dr Oz: "It lowers the risk of heart disease and you can live longer." She added that it may also help lower the risk of dementia, calling it a "heart healthy" way of eating that works for her.

Rather than eliminating foods, Rachael has focused on building meals around wholesome, accessible ingredients, something she insists can be both "easy and fun."

In her kitchen, that means keeping a well-stocked pantry filled with staples that support a balanced diet. She has shared that items like olive oil, tomatoes, herbs, pasta and grains are essential, along with simple shortcuts that make healthy eating more achievable.

"Dried beans and grains like farro, all of these you can get in a can," she explained, encouraging people not to overcomplicate the process. "They are high protein, high fiber and nutrient dense."

Fresh produce also plays a central role in her routine, with colourful vegetables forming the backbone of her meals. "You don’t need a multi vitamin, you need the rainbow of vegetables," she said, highlighting ingredients such as peppers, garlic, spinach and beets.

Protein is another key focus. Rachael has pointed to eggs as a staple, noting: "Another important source of protein is eggs, because they are nutrient rich and not expensive." She even shared a personal preference, adding that she opts for brown shells over white.

Seafood is also firmly on the menu, particularly options rich in healthy fats. She has spoken about enjoying fresh fish and sardines, describing them as "good fats," often paired with lemon juice to balance flavours.

Even the way she eats her meals has been carefully considered. Rachael revealed that she prefers to eat her salad after her main course, explaining it’s a "digestive thing",  a habit that has been praised as a smart approach.

The TV personality has kept a relatively low profile in 2025 and after enduring a tough five years, due to a health issue and several tragedies involving her properties.

 Rachael revealed on her podcast, I'll Sleep When I'm Dead, that she'd suffered "a couple of bad falls" in 2024 while carrying firewood outside her home in New York, yet appeared to recover quickly from the ordeal.
